Sabudana Khichdi is a popular Maharashtrian vegetarian breakfast dish made from soaked sabudana (tapioca pearls), roasted peanuts, cumin, green chilli, and tender boiled potato.

Rinse sabudana until water runs clear. Soak in enough water to just cover, for 4-5 hours or overnight. Drain well and let stand for 10 mins.
Dry roast peanuts in a pan on medium flame until golden. Cool and coarsely crush.
Boil, peel, and dice the potato.

Heat oil in a kadhai or nonstick pan. Add cumin seeds and let them splutter.
Add chopped green chilli and sauté for 30 seconds.
Add diced boiled potato, sauté for 1 minute.
Add drained sabudana, coarsely crushed peanuts, salt, and sugar. Toss gently to mix without mashing.
Cook on low flame, stirring occasionally, until sabudana turns translucent and pearls remain separate (about 4-5 mins).
Turn off the heat. Mix in chopped coriander leaves. Squeeze lemon juice just before serving.
