Chicken Handi is a classic North Indian curry that's beloved for its creamy, aromatic, and slightly tangy profile. Succulent pieces of chicken are cooked in a handi (clay pot) or any heavy-bottomed pan, allowing the flavors of tomatoes, yogurt, and a special blend of spices to meld beautifully. A touch of cream at the end provides richness and balances the spices. Enjoy it hot with roti, naan, or steamed rice. For a lighter version, you can skip the cream or use low-fat yogurt. This dish works great for meal prep and tastes even better the next day as the flavors continue to develop.
