Soak urad dal in water for 4-5 hours, then drain completely.
Grind the soaked urad dal (with a tablespoon of water if needed) to a smooth, thick, and fluffy batter.
Add finely chopped ginger, green chilli, curry leaves, and salt to the batter. Beat well to aerate.
Heat oil in a deep pan for frying.
Wet your hand, shape a portion of batter into a ball, make a hole in the center (like a doughnut).
Gently slide the vada into hot oil. Fry on medium flame, flipping as needed, until crisp and golden brown on both sides (about 2-3 minutes per vada).
Drain the fried vada on paper towels to remove excess oil.
Serve hot with coconut chutney and sambar.
