Heat oil in a pan on medium flame. Add mustard seeds and let them splutter.
Add urad dal, roasted peanuts, green chilli, and curry leaves. Sauté for 1-2 minutes till dal turns golden.
Add turmeric powder, stir briefly, then add the cooked rice and mix well to coat the rice evenly.
Add salt and cook for 1 more minute, stirring gently.
Turn off the flame. Squeeze fresh lemon juice over the rice and mix gently. Garnish with chopped coriander leaves and serve warm.
