Rinse quinoa thoroughly in water and drain.
Heat olive oil in a pan. Add cumin seeds and let them splutter.
Add chopped onion, sauté until translucent.
Add ginger and garlic, sauté for 1 minute.
Add carrot, beans, capsicum, and peas. Sauté for 2-3 minutes.
Add chopped tomato, salt, and black pepper; cook until tomatoes soften.
Add rinsed quinoa and mix well with the vegetables.
Pour in water, bring to a boil. Reduce the flame, cover, and simmer until quinoa is cooked and water absorbed.
Turn off the heat and let the quinoa rest for 5 minutes.
Fluff the quinoa with a fork. Mix in lemon juice and fresh coriander before serving.
