Mutton Rogan Josh is a classic Kashmiri curry made with tender pieces of mutton slow-cooked in a fragrant and rich gravy of Kashmiri red chilli, fennel, dry ginger, and whole spices. Deeply flavorful and warming, it's a signature comfort dish served best with rice or Indian breads.

Heat oil and ghee in a heavy-bottomed pan on medium heat.
Add bay leaf, cloves, cinnamon, green cardamom, black cardamom and sauté for 30 seconds until fragrant.
Add sliced onions and sauté until golden brown.

Add the mutton pieces and cook on high heat, stirring occasionally, till they are well browned.
Lower the flame and add beaten yogurt slowly, stirring continuously to avoid curdling.
Add Kashmiri red chilli powder, fennel seed powder, dry ginger powder, and salt. Mix well.
Pour in water, cover, and simmer on low heat until mutton becomes tender and the gravy thickens.
Check seasoning, remove whole spices if desired, and serve hot.
