Poha is a light, fluffy and mildly spiced North Indian breakfast made from rinsed medium-thick flattened rice, sautéed with onion, green chilli, turmeric, curry leaves and mustard seeds, with roasted peanuts for crunch.

Place flattened rice in a sieve and rinse gently under running water, tossing lightly until it becomes soft but not mushy. Drain and set aside.
Heat oil in a pan on medium flame. Add mustard seeds and let them crackle.
Add curry leaves and peanuts, sauté for 1 minute. Add chopped onion and green chilli, sauté till softened.

Sprinkle turmeric. Mix and cook for another 30 seconds.
Add drained flattened rice, salt, and sugar. Mix well and cook on low flame for 2-3 minutes, gently tossing so the poha heats through but stays fluffy.
Turn off the flame, add coriander leaves, and cover for 1 minute to allow flavors to meld.
Fluff gently and serve hot, garnished with lemon wedges.
