Heat mustard oil in a deep pan until it starts to smoke, then lower the heat.
Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until golden brown.
Add ginger, garlic, and green chilli; sauté for 1 minute.
Add chopped tomatoes and cook until soft and oil starts to separate.
Add coriander powder, turmeric powder, red chilli powder, salt, and kasuri methi. Cook for another 2 minutes.
Lower the flame completely. Add room-temperature beaten curd gradually while stirring continuously to prevent curdling.
Add water, bring the gravy to a simmer and cook for 4 minutes.
Mix in fresh cream and garam masala; simmer another 2 minutes.
Just before serving, add the crunchy sev to the hot gravy and gently fold it in. Heat for 30–60 seconds, then turn off the heat and serve immediately.
Garnish with chopped coriander leaves and serve immediately.
