Spiralize or julienne the lauki to form noodle-like strands. Set aside.
Heat olive oil in a nonstick pan over medium heat. Add paneer cubes and sauté for 2 minutes until lightly golden. Remove and set aside.
In the same pan, add carrot and bell pepper. Sauté for 2 minutes until slightly tender but still crisp.
Add sweet corn and lauki noodles. Stir fry gently for 2-3 minutes — do not overcook the lauki to keep it firm.
Add back the sautéed paneer. Season with salt and black pepper, toss well, and stir fry for 1 minute.
Turn off the heat, drizzle lemon juice, and garnish with chopped coriander leaves. Serve immediately.
